Ingredients
| 325g tin (25g reserved) | Sweetcorn |
| 20g | butter |
| 1 teaspoon | organic ginger |
| 1 | medium onion finely sliced |
| 1 | pint stock |
| 1 teaspoon | organic nigella seeds |
| Organic perfect salt |
Method
- Fry onions in 20g butter without browning
- Add the sweetcorn, ginger and the stock
- Cook over a medium heat for approx 15 minutes to let the flavours cook together
- Blend the soup a little, but still with some texture to it
- Fry the reserved sweetcorn with the half teaspoon butter or vegan dairy free block or oil
- Top the soup with the pan toasted sweetcorn and sprinkle with nigella seeds to serve
- Serve hot
