Silesian beef paupiette Recipe (similar to beef olives)
One of the Steenbergs crew's favourite dishes!
Ingredients
| 4 | thin steaks |
| Onions | |
| Bacon | |
| 1-2 | organic gherkins |
| Mustard | |
| Salt | |
| pepper ground | |
| Organic paprika | |
| Vegetable bouillon (if using bouillon, don’t add salt) or stock | |
| Gravy (optional) |
Method
- Tenderise the meat, add salt, pepper, mustard, to each steak.
- Finely slice the onions, bacon and gherkins.
- Divide the mixture of onions, bacon and gherkins evenly, and layer onto the top of the steaks.
- Sprinkle paprika on the top.
- Roll up each steak into a tightly wrapped roulade.
- Bind with either a white muslin cloth or a toothpick or skewer.
- Heat up the fat and brown off/carmelise the steaks. Then add a little boullion or stock and warm under cover for about 1 hour. When the meat is tender take out and drain.
- Add to the remaining stock /sauce a little cream and flour or gravy.
- Serve with dumplings or mashed potato and sauerkraut or salad.
