500g

sausage meat

red onions, peeled & finely chopped

2 tbsp

olive oil

clove garlic, peeled & finely chopped

sage leaves, finely chopped (or 1 tsp dried sage)

2 tsp

Quatre Epices Spice blend

Sea salt to season

1 x 500g pack

puff pastry

egg yolk

Sesame seeds to decorate

Tasty lightly spiced sausage rolls which are perfect for picnics or lunchboxes.

Method

Preheat your oven to 190C.
Heat the olive oil in a pan and sauté the onions and garlic for 5-10 minutes until soft.
Place the sausagemeat, sage, spices, garlic and onions into a large bowl and mix thoroughly. Season with sea salt.
Roll out your puff pastry to a large rectangle then cut it down the middle (long length) to create 2 thin rectangles.
Spread half of the mixture out along the centre of each pastry strip in a sausage shape.
Roll up both sides of the pastry to meet each other, encasing the sausagemeat and pinch to seal.
Roll over so that the seal is at the bottom. Brush with beaten egg yolk and sprinkle on some sesame seeds. Repeat with the other strip.
Cut each roll into smaller sections (approx. 6 per roll) for finger sized sausage rolls.
Place on a greased baking tray and place in the preheated oven for 25-30 minutes until golden brown and cooked through.
Perfect for picnics and lunchboxes.
