Refreshing fruity chicken and prawn salad for a summer's day.
| 1 | crisp apple (ideally Granny Smiths) |
| 1 | large orange |
| 100g | green seedless grapes |
| 100g | red seedless grapes |
| 150g | cooked chicken, cut into thin strips |
| 150g | cooked, peeled prawns |
| 2 | cloves garlic, smashed and finely chopped |
| 2 | shallots, peeled and thinly sliced |
| 3tbsp | sunflower oil, to which 5 drops of sesame oil have been added |
| 1 | green chilli, very thinly slicedDressing: |
| 4tbsp | dry roast peanuts, crushed in pestle & mortar |
| 2tbsp | fresh lime juice |
| 1 tsp | organic cane sugar |
| 2tbsp | fresh coriander leaves, chopped |
