Dark Chocolate Peppermint Mousse recipe
A dark and decadent mint chocolate mousse made with 85% Divine Dark Chocolate. Serves 2-3
Ingredients
| 75g | 85% dark chocolate (we used Divine Chocolate) |
| 3 | egg whites |
| 25g | caster sugar |
| 1-2 tsp to taste | Steenbergs peppermint extract |
Method
- Break up the chocolate bar into small pieces and either melt carefully in the microwave (checking and stirring every 30 seconds) or melt in a heatproof bowl over a pan of simmering water. Leave to cool slightly.
- Whisk the egg whites until forming soft peaks, then gradually whisk in the caster sugar until you have a glossy consistency.
- Add a spoonful of the egg white mixture into the melted chocolate and stir vigorously to combine. If the mixture seizes slightly, add more egg white and stir again.
- Gradually fold in the rest of the egg white mixture until no white remains.
- Add a teaspoon of peppermint extract and stir gently to combine. Add another teaspoonful for a really minty taste.
- Spoon into individual serving dishes and top with fresh mint.
