Wholesome spelt muesli bread from Gourmet Glow. Delicious served warm with salted butter.

Method

Mix the water, yeast, honey, muesli and dried fruit in a large bowl and set aside for 5-10 minutes to become foamy.
Stir in the remaining ingredients and bring together to form a dough.
Turn onto a floured surface and knead 5-8 minutes to form a stretchy dough. Place in an oiled bowl, cover with oiled clingfilm and leave for an hour, or until doubled in size.
After an hour, roll into a large rectangle, and using a pizza wheel or knife cut into about 16 pieces (this will give Dinner Roll sized rolls, for larger rolls, divide into less pieces)
Shape each piece into a ball and set on a lined tray, loosely covered in oiled clingfilm for another hour or until doubled in size.
Preheat the oven 190C.
When ready, bake the rolls 15-18 minutes or until the base sounds hollow. Cool and enjoy with butter.
