A quick and easy vanilla cake, topped with edible fresh flowers. Thanks to Nikibakes for the recipe.
Ingredients
| 300g | unsalted butter |
| 300g | coconut sugar |
| 3 | medium eggs |
| 300g | self raising flour |
| 1 tsp | vanilla extract |
| icing sugar + a little water to create the icing | |
| to decorate | fresh/pressed flowers |
Method
- Preheat your oven to 180ºC/line a brownie tin with greaseproof paper.
- Beat together your butter and coconut sugar until light and fluffy.
- Add in the eggs, self raising flour, and vanilla extract and beat again until combined well.
- Pour into the tin and bake in the oven for 45-50 minutes, or until baked through.
- Once baked, let the cake cool fully in the tin. Ice away and decorate with your flowers, easy!
