Easy Blueberry & Lemon Loaf
A deliciously summery bake with blueberries and lemon. Many thanks to Nikibakes for the recipe
Ingredients
| 160g | ground almonds |
| 170g | butter |
| 170g | light brown sugar |
| 170g | gluten free self raising flour |
| 1/4 tsp | xanthum gum |
| 2 | large eggs |
| 1 tsp | vanilla extract |
| 1 tsp | lemon extract |
| 1 | lemon, juice and zest |
| 200g | fresh or frozen blueberries |
Method
- Preheat the oven to 180C.
- Prepare a loaf tin with greaseproof paper, set aside.
- Next, simply throw all your ingredients bar the blueberries out into a bowl and mix thoroughly until combined.
- Spoon half the mixture into the tin and make sure it's level.
- Spread the blueberries over the mixture.
- Cover with the remaining half of the mixture and level.
- Place in the preheated oven for around 55 minutes.
- Remove the loaf from the oven and check it's fully cooked by inserting a skewer through the middle.
- Leave to cool in the tin for a short while before dusting your loaf with icing sugar. Enjoy!
