A quick and easy biscuit recipe which is delicious with a refreshing afternoon cup of tea! Makes 16-20
Ingredients
| 250g | butter, softened |
| 125g | caster sugar |
| 1 | lemon, zested |
| 3 tsp | lemon extract |
| 285g | self-raising flour |
| to sprinkle | demerara sugar |
Method
- Preheat the oven to 180C and line 2 baking trays with parchment
- Beat the softened butter with the sugar in a bowl until soft and creamy
- Add the lemon zest and lemon extract and combine
- Finally mix in the flour and stir to combine fully
- Shape into walnut sized balls and place on the baking trays, leaving plenty of room in between as they will spread on cooking.
- Press down each biscuit with a fork to make a nice pattern and sprinkle a little Demerara sugar on top for extra crunch
- Bake for 12-14 minutes until golden
- Leave to cool on the trays before moving to a wire rack to cool completely
- Store in an airtight tin.
