Ingredients: Sugar, Ginger, Nutmeg.
Directions: Stir contents of one sachet of Old Hamlet Whisky Toddy Spices into 450 ml or a quarter pint of cold water. Heat, stirring occasionally until the sugar has dissolved. Bring to the boil and remove off the heat instantly. Add two drams or 50 ml of whisky, stir and enjoy.

Ingredients: Ginger, Allspice, Lemon Peel, Mace.
Directions: Pour 150ml (¼ pint) of brandy into a pan, then add 1 Champagne Cocktail spice bundle, not your costliest bottle of bubbly. Heat gently for 5 minutes, but do not boil. Let the brandy cool for at least 15 minutes, then remove the spice bundle. Place a sugar lump in each champagne glass, plus 1 – 2 drops of Angostura bitters. Add a dash (1 dessertspoon) of spiced brandy, and pour over the chilled champagne, or sparkling wine.
