How to make

  1. Put all the ingredients into a bowl, whisk together then leave for 10 minutes for the Matzo meal to swell up.  It should now be at a dropping ocnsistency.
  2. Pour about ¼ - ½ inch / ½  - 1 cm of sunflower oil into a large heavy bottomed frying pan, ideally using one without a strong flavour of its own.
  3. When hot, drop in a dessertspoonful of the bubalas batter into the oil, wait until bubbles form and the edges start to crisp.  Flip over and fry until golden brown.
  4. Put the caster sugar into a large plate or tray.  When the individual bubalas have been cooked, put them into the tray and sprinkle caster sugar over them.
  5. Eat right away.
