Mexican Mangos Con Crema

Ingredients

What to do?

  1. Combine water, half the sugar and the cinnamon and vanilla in a heavy saucepan. Bring to the boil and simmer for 20 minutes until the syrup thickens, stirring occasionally. Add the mango slices to the syrup and simmer for 7 minutes until tender. Discard the cinnamon stick and vanilla pod. Allow to cool for 1 hour.
  2. Just before serving, whip the cream with the remaining sugar and fold in the rum.
