Chocolate Lime Mousse

What to do


  1. Break up the chocolate and melt in a small ban over simmering water, stirring occasionally. Remove from heat and allow to cool.
  2. Separate eggs, placing yolks in deep bowl with the sugar and the finely grated lime rind. Whisk with electric beater until mousse like. Whisk in melted chocolate, then 2 tbls cream. Spoon in strained lime juice into small basin and sprinkle over gelatine. Leave to soak for 10 minutes.
  3. Dissolve gelatine in a pan of simmering water until gelatine clears and liquefies. Whisk into chocolate mixture. Finally whisk egg whites until stiff but not dry and fold into chocolate mixture. Divide into ramekins and refrigerate to set.
  4. Decorate with a little cream and grated chocolate.
