Moroccan Sweet Tomato Crostini

What to do

  1. Peel the tomatoes by dunking them quickly in a bowl of boiling water, then cutting off the skin with a knife. Halve the tomatoes and remove the seeds. You could use tinned plum tomatoes, if you want.
  2. Heat the butter in a saucepan with the onion, saffron, natural sea salt and the cracked black pepper. When the onions are translucent, add the tomatoes and a tablespoon of water. Bring to the boil,. Cover and simmer for 45 minutes until the whole mixture is reduced. Make sure that it does not boil dry.
  3. Add the clear honey and cinnamon and cook, stirring occasionally, for 2 minutes. Leave to cool.
  4. Serve on toasted bread, sprinkling with the dry roasted sesame seeds.
