Avocado salad with citrus vinaigrette

Recipe for 4

Ingredients

• 6tbsp olive oil
• 2tbsp lime juice
• 1 clove garlic, chopped finely
• Organic Indian pepper, coarsely ground *
• Steenbergs Organic natural sea salt*
• 1 medium-sized navel orange, peeled and sectioned
• 1 small head chicory or frisée lettuce, rinsed and dried
• 2 large avocados, peeled, pitted and sliced
• 1 small red onion, thinly sliced
• 2tbsp chopped fresh coriander leaf
• *Try Steenbergs organic perfect salt instead

What to do

1. Whisk together the oil, lemon juice, garlic, sea salt and pepper in a bowl. Add the orange sections and toss together until well mixed. Arrange the chicory or lettuce leaves on 4 plates. Spoon the oranges over the salad leaves, keeping back the dressing. Top with avocado slices and red onion. Drizzle each salad with ¼ of the dressing and garnish with coriander leaves. Serve immediately.
