Steak In Green Peppercorn Sauce

Instructions

  1. With a pestle, crush green peppercorns in a mortar. Add these to the 2tbsp double cream and set aside. Heat butter in heavy grilling pan. Sauté mushrooms, shallots and parsley. Add cognac and cook off alcohol. Add the peppercorn mixture and simmer for 2 minutes. Add the crème fraiche and a good pinch of perfect salt seasoning. Remove from heat and keep warm.
  2. Brush steaks with sunflower oil. Cook steaks on a hot grill with a little butter to your liking. Pour sauce over cooked steaks. Serve with fried potatoes and rocket salad.
