Tabil Pork Casserole

A hearty and warming casserole given a kick by the rich Tabil spice blend - an essential on a cold winters night, after bonfire night or carol singing - whose versatility enables it to be equally delicious served with rice, creamy mash or jacket potatoes. As I cooked it in a slow cooker, the wonderful aroma greeted us as we returned home - and it was ready to eat immediately!

Method

  1. Season the flour with the Perfect Salt and roll the pork in the flour
  2. Heat some oil in a casserole dish and brown the easoned pork. Add the onions
  3. Add the rest of the ingredients and bring to the boil
  4. Simmer or cook in the oven in a medium heat for about an hour
  5. Add more Tabil Spice Blend according to taste

If cooking this in a slow cooker, brown the meat and onions then transfer to a slow cooker. Add remaining ingredients. I cooked this on 'slow' for 7ish hours - delicious!
