Silesian beef paupiette (similar to beef olives)

 One of the Steenbergs crew's favourite dishes!

 

Ingredients:

Instructions

  1. Tenderise the meat, add salt, pepper, mustard, to each steak. 
  2. Finely slice the onions, bacon and gherkins.
  3. Divide the mixture of onions, bacon and gherkins evenly, and layer onto the top of the steaks.
  4. Sprinkle paprika on the top.
  5. Roll up each steak into a tightly wrapped roulade. 
  6. Bind with either a white muslin cloth or a toothpick or skewer.
  7. Heat up the fat and brown off/carmelise the steaks. Then add a little boullion or stock and warm under cover for about 1 hour. When the meat is tender take out and drain.
  8. Add to the remaining stock /sauce a little cream and flour or gravy.
  9. Serve with dumplings or mashed potato and sauerkraut or salad.
