Vegetable Fajitas

A delicious mixture of vegetables brought alive by fajita seasoning. What a wonderful way to ensure your children go somewhere towards having their 5-a-day without realising it, fantastic!

Ingredients

Serves 4

Method

  1. Heat oil in a large skillet, or very heavy bottomed pan
  2. Turn down the heat slightly and add the onion slices. Cook until starting to colour
  3. Add the green beans and cook for 2 minutes
  4. Add the peppers and cook for 2 minutes
  5. Add the fajita seasoning, lime juice and a little water (to assist cooking). Stir and cook for 5 minutes
  6. Add cherry tomatoes to warm through and soften
  7. Heat the tortillas according to instructions and prepare guacamole, salsa and soured cream (or put into dishes!)
  8. Add the spinach, watercress and rocket to the pan. Stir the ingredients and remoce from the heat immediately
  9. Pile the ingredients onto the tortillas, roll them into a parcel and serve with the salsa, guacamole and soured cream - add to taste and preference. Enjoy!
