1.5kg organic beef - the highest quality you can find
1tbsp organic perfect salt seasoning
Marinade:
300ml red wine
300ml red wine vinegar
75ml organic olive oil
4tsp Steenbergs organic Mediterranean rub
Instructions
The evening before the barbecue mix the marinade and coat the beef with the marinade. Keep in a fridge overnight, basting before going to bed and several times during the following day.
Prepare the barbecue. Take the beef from the fridge, and place on a plate, leaving behind the marinade for basting later. Run the perfect seasoning over the beef and leave for 30 minutes.
Roast the beef on a barbecue for 1½ to 2 hours (depending on style you want), basting every 30 minutes with the marinade. Check that it is cooked to desired level.
