What to do

  1. Preheat the oven to 150°C.
  2. Heat the oil in a large flame proof casserole dish. Add the mince and cook in batches over a high heat for 5 minutes. Lift out with a slotted spoon and keep warm. Lower the heat and add the onions, Mexican chile powder and garlic and cook, stirring occasionally, for a few minutes until softened.
  3. Add flour and cook, stirring for 1 minute. Add the stock, tomato puree, grated chocolate, salt and pepper. Return the mince to the casserole dish, add the beans and bring to the boil. Cover and cook for 1½ hours.
  4. Add the red pepper and cook for 30 minutes.
  5. Taste for seasoning and garnish with the chopped coriander leaf.
