Moroccan Mint Tea

This is a Moroccan classic. Traditionally, it is made by the master of the house and a good mint tea is sweetened with real cane sugar. If you wish, you can reduce or omit the sugar from the tea. 

Recipe for 4

3tbsp organic muscovado sugar, or other brown sugar
55g (2oz) fresh mint
2tsp organic green tea leaves
800ml (1.3 pints) freshly drawn water

Fill teapot with boiling water and stir in the organic Fairtrade sugar. Alternatively, put 800ml water into a pan, adding the organic Fairtrade sugar to the water, then bring to the boil and take off boil immediately. Add organic mint and organic green tea leaves to boiling water and leave to infuse for 3 minutes. Strain and serve in tea glasses or tea cups.
