What to do

  1. Preheat oven to 190C. Lightly grease two loaf tins and line with baking parchment.
  2. Sift the plain flour with the salt and baking powder. Rub in the butter and sugar until it has the consistency of breadcrumbs. Mix in raisins, currants and mixed peel. Stir in the treacle, almond essence, milk and mix to a soft dough.
  3. Divide into two small tins and bake for about an hour or until the cake springs back when pressed lightly. Tip out of tins and cool on wire rack.
  4. Serve on own, with butter or a good Wensleydale cheese.
