All-purpose Italian Pasta Sauce

What to do

  1. Wipe and halve the tomatoes; squeeze over strainer and remove the seeds, then reserve the juice from the tomatoes. 
  2. Melt butter in pan and soften the sliced onion, then add the crushed garlic, the Italian herb seasoning and the stock.  Bring to the boil, season with fleur de sel and black pepper and perhaps a pinch of salt. 
  3. Add the tomatoes and their juice, cover and simmer for at least 20 minutes or until pulpy. 
  4. Rub the sauce through a strainer to remove the pulp, then return to the rinsed out pan.  Boil again until really thick, stirring occasionally then stir in butter.
