Place organic saffron threads onto foil, then turn foil over and lightly crush threads with rolling pin. Put the crushed organic saffron in a cup, pour on 2tbsp boiling water and allow to infuse for 5 minutes. Add infusion to measured water.
Put all ingredients (except dried fruits) into bread machine in order as indicated. Set to basic programme with raisin option, if available. Select light crust and start. Add fruit when machine beeps or halfway through kneading cycle.
After baking, remove bread from machine and shake out to cool. Brush top of loaf with honey to glaze.
