Instructions

  1. Grease a metal baking tray with a pastry (or paint) brush; turn the baking tray upside down after greasing to allow any excess oil to drain away. Heat oven to 180°C.
  2. Beat the organic butter and organic Fairtrade sugar until light and fluffy. Beat in the egg gradually. Stir in the rest of the ingredients and turn into the greased loaf tin.
  3. Bake for 1¼ - 1½ hours, or until just set in the middle - a wooden skewer inserted into the centre should come out with just a few moist crumbs on it. Don't overbake.
  4. Leave to cool completely in the pan before cutting and serving - ideally 24 hours but we can't wait that long. Serve with butter or on their own.
