Chocolate Biscuits

Axel's mum got this recipe from a friend of hers called Ronnie Spalding and so they have forever been known as "Ronnie Biscuits". The secret is to slightly undercook them - you then get a soft, gooey centre.

  1. Grease a metal baking tray with a pastry (or paint) brush or butter paper; turn the baking tray upside down after greasing with organic sunflower oil to allow any excess oil to drain away. Heat oven to 150°C.
  2. Put all the organic ingredients into a mixing bowl and thoroughly mix with a wooden spoon, mixer or blender. Taste the gooey mixture, then bake them as below.
  3. Take a teaspoonful at a time and roll into small balls; put these onto an ungreased baking tray and mark firmly on back with wet fork and flatten. Bake for 15 - 20 minutes. Don't overbake. Sprinkle on top with caster sugar. Leave to cool completely on wire rack before serving.
