Oat biscuits

Axel remembers glorious tea times, when his Mum would make drop scones and serve these oat biscuits. The house would smell of ginger and syrup for (what seemed like) ages before these oat biscuits were ready to be eaten.

Instructions

  1. Grease a metal baking tray with a pastry (or paint) brush or butter paper; turn the baking tray upside down after greasing to allow any excess oil to drain away. Heat oven to 170°C.
  2. Mix the organic oats, flour and sugar in a large mixing bowl. Melt the butter and syrup in a saucepan. Dissolve the bicarbonate of soda in a little water and add to the melted golden syrup mixture. Pour this on top of the dry ingredients and mix well. The mixture tastes delicious at this stage, so have a spoonful and then proceed.
  3. Roll into small balls and put on the prepared pan and slightly press down. Bake for 15 minutes. Don't overbake. Leave to cool completely on wire rack before serving.
