Sophie's Chocolate Brownies

Sophie learnt this recipe when we first moved to Yorkshire from a great friend. Every year we have a Macmillan Coffee Morning in our house and these are a mainstay for the morning, as well as for any other charity events that we cook for.

  1. Grease a metal baking tray with a pastry (or paint) brush; turn the baking tray upside down after greasing to allow any excess oil to drain away. Heat oven to 180°C.
  2. Sift the organic self-raising flour and organic cocoa into a large mixing bowl. Add the sugar, butter and eggs. Beat all the ingredients together with a blender/mixer. Don't overmix and don't worry about the appalling look of the sloppy mixture - this quite normal!
  3. Pour the mixture into the prepared pan and smooth to an even layer. Bake for 20 - 25 minutes, or until just set in the middle - a wooden skewer inserted into the centre should come out with just a few moist crumbs on it. Don't overbake. Leave to cool completely in the pan before cutting into squares and serving.
