Steenbergs New Mexico Red Chilli is one of the classic home grown chillis from Southwest USA around Hatch in Southern New Mexico State, where the chiles have great names like Big Jim and Anaheim. The New Mexico Chilli is an ancient chilli grown originally by the Pueblo Indians. Steenbergs New Mexico Chili is a sweet yet earthy flavoured, red chili with tones of sage and cherry fruity, with a bright red colour, and which is mildly hot at around 4/10 or 1500-2500 Scoville Heat Units.
Chilli plants vary considerably in size, appearance and heat. New Mexico red chilli comes from the Capsicum annuum species and is grown as an annual shrub. Capsicum annuum has pointed oval leaves that are tear shaped and woody stems, growing to 1 - 2 metres high (3 - 6 ft), with shallow roots. The red chilli pod is a many seeded red berry with a shiny skin, which is about 15cm long (6-7 inches). The aroma and flavour of fresh chillis is distinctly capsicum-like, with a hint of sweetness. Their pungent bite comes from the levels of capsaicin present in the fruit; capsaicin causes the brain to release endorphins and so feelings of wellbeing. New Mexico chillis are generally planted in March-April, flower in mid-June through to July and are harvested from late September with red chiles harvested from earlu October. To dry New Mexico chillis, the fresh chillies are dried in either belt or tunnel dryers rapidly dehydrating the fresh chile to 10% moisture levels from the 70-80% when fresh.
