Steenbergs Organic Chervil is a classic dried herb that is really popular in French cuisine and organic chervil is an essential ingredient in the French herbal blend - Fines Herbes.  Organic chervil has a tarragon-like aroma and flavour with a grassy, hay-like aroma and hints of parsley as well, with very delicate hints of anise in the background somewhere just trying to sneak out.  Organic chervil is lovely sprinkled over any egg dish (except fried eggs!) and especially through an omelette, or in a quiche or even on a pizza.

Chervil is a shade loving biennial that does not do well in hot, dry conditions.  The small chervil plants grow to 30cm high (12 inches) and have bright green, parsley-like leaves.  The white small flowers of the chervil herb produce long, thin seeds that are not used.  The aroma of the fresh leaves is grassy and anise like with a flavour akin to tarragon.  The dried herb has more hay-like aroma and has the flavour of parsley, but the anise notes are much weakened by the drying process.  For further information, dig into the article on Wikipedia.

Chervil is a subtly flavoured herb.  chervil does not dominate your dish, but enhances the flavours of others herbs really well, for example in the French classic - Fines Herbes.  It is great with chicken, so rub it onto a roast or include in your stuffing, and seemsto complement most vegetables.  Whenever you might have used parsley, chervil will do the trick and give your dishes a more sophisticated air - perhaps due to its tarragon like notes.  For some extra inspiration, try the BBC Recipes site.
