Jasmine flowers are probably best known for scenting green tea - Jasmine tea - or rice. The jasmine flowers are pretty white flowers with limited remaining fragrance, so are best used as a finishing touch to your cooking rather than as a flavouring.


Jasmine covers a wide range of shrubs related to the olive tree.  The jasmine of tea flavouring comes from Jasminum sambuc, which is native to Asia, and is used for Steenbergs jasmine flowers.  It is sometimes called Arabian jasmine.  Jasmine is an evergreen shrub of 1-3m (2-10ft) in height.  jasmine leaves are oval and range in size from 4-12cm long (1.5-5 inches) and 2 - 7.5cm wide (1-3 inches).  The white jasmine flowers blossom throughout the year and form in clusters of 3-12 at the end of branches.  The fresh flowers have an intensely floral, orange like aroma which is imparted to green tea through drying the freshly steamed green tea with freshly picked jasmine blossom.  The dried flower has much less aroma than the fresh flower and we use it mainly as a finishing ingredient that adds a pure white colour to mixes.  For more on jasmine, check out Wikipedia.
