Steenbergs dried cornflower petals are a gorgeous and fantastic blue colour. Now what to use them for - well they can be used for craft uses including hand made paper, confetti and potpourri and as a colourful addition to a variety of home-made products from soap onwards.  Dried cornflower petals are a great finishing sprinkle to any cuisine, so use as a garnish in food - be it salads, rice etc wherever you feel the need for the exotic blue colour.

Conflower petals come from Centaurea cyanus, a small annual flowering plant, the cornflower.  Cornflowers are annuals that grow to 40-90cm (16-35 inches), have 1-4cm long lanceolate leaves and intensely blue flowerheads that are 1-3cm (1 inch) in diameter.  Weirdly the blue comes from protocyanin which also gives the red in rose blossom.  The flowerhead structure in cornflowers is a ring of large spreading ray florets around a central cluster of disc florets.  The flowers of cornflowers are edible and used to colour salads or add a ray of colour to teas, such as Steenbergs Imperial Earl Grey.  For more gen on cornflower, try Wikipedia.

There is a really gorgeous use of marigold petals at the Lovely Food Blog for a Blueberry tart With Cornflower and Marigold Petals. Anymore fab ideas would be gratefully received.
