Marigold petals are wonderful, bright orange petals from the pot marigold plant and are edible herbs that can be used in a myriad of ways to add a dash of brightness to your food - a fab. From scattering over salads, rice dishes, quinoa and couscous to a garnish on a whole host of other dishes. Do not cook them as you will lose the intensity of the colour.  As well as being used in cooking, marigold flowers can also be used in crafting, for example hand-making paper or mixing your own potpourri.

Marigold comes from pot marigold, Calendula officinalis.  Marigold is originally native to southern Europe, but is naturalised throughout the temperate more notherly regions as well.  Marigold is a short-lived perennial plant that grows 80cm tall on erect stems.  Marigold leaves are oblong-lanceolate and grow 5-17cm in length, and are hairy on both sides.  Marigold flowers are yellow and 4-7cm in diameter and comprise a ring of ray florets.  Fresh marigold petals can be used in salads or to add a dash of colour via a garnish to dishes, especially vegetables.  At Steenbergs, we use marigold for adding colour to finishing salts.  For more information on marigold flowers or calendula, try Wikipedia.

There is a really gorgeous use of marigold petals at the Lovely Food Blog for a Blueberry tart With Cornflower and Marigold Petals.  Anymore fab ideas would be gratefully received.
