Steenbergs Organic Celery Seed are gathered from an ancient, hardy marsh plant called "wild celery" or "smallage". Steenbergs Celery Seed has an aroma that is grassy and hay-like taste and a flavour that is more concentrated than the plant itself, being penetrating, spicy with hints of nutmeg, citrus, parsley, with a bitter lingering aftertaste.
Smallage, Apium graveolens, is different from the celery stem plant that is used to flavour Steenbergs Organic Celery Salt. Umbrella-shaped white flowers develop pairs of tiny 1mm long seeds. These celery seeds are a light brown or khaki colour and have a strong hay-like aroma that reminds one of celery stems. The flavour of organic celery seeds is strong, bitter, warm, astringent and lingers on the palate, while the aroma is penetrating and reminiscent of celery stalks. As a biennial, celery seeds are harvested in the second year after planting by cutting the smallage stems, letting them dry and then threshing them to remove the tiny seeds from the husks. For a different way to flavour beef, add a touch of organic celery seed. Use whole Steenbergs organic celery seeds in salad dressings, soups and rubbed into large cuts of meat. Use ½ teaspoon of organic celery seed per 500g of beef or pork for roasting. Organic celery seed is also one of the many ingredients that can be used for pickling.
