Steenbergs Organic Lemon Peel Granules are a great alternative to freshly grated lemon and are a great substitute for salt as a flavour enhancer, or good to pep up your green or black tea. Steenbergs Organic Lemon Peel Granules are much sweeter than the tangy, acidic freshness of freshly grated lemon, but still have some of that freshness. We use the lemon granules in Steenbergs Organic Lemon Sugar.
Lemon comes from a small evergreen tree, Citrus x limon, which was originally a native of Asia, but is now native to most warmer climates of the world, especially Argentina, Brazil, France, India, Italy, Mexico, Spain and the USA (especially California). They belong to the same family as limes and oranges. Lemon trees grow to 3-4.5m high (10-15ft), have oval green leaves. Lemon flowers are beautiful small flowers that are white to creamy-yellow in colour and have a heady citrus aroma, while the leaves are bright green oval shapes - some great photos are available at Wikimedia. The fruit is produced almost all year around and is an oval shaped fruit with a thick skin, which can have a smooth or wrinkled skin. The outermost layer, the pericarp or zest, is where lemon has its characteristic volatile oils, such as limonene and citral, whereas the inner layer contains some bitter compounds, including coumarin derivatives.
