Steenbergs organic dried horseradish comes as granules.  Horseradish has a distinctive superpungent, tear-jerking aroma and taste that is most strong in the fresh root, but also comes through in the dry horseradish when rehydrated.  Horseradish works really well in a sauce with cream or mayonnaise, then served with cold smoked fish or cold meats, especially cold roast beef.  Another use of horseadish is to perk up a yellow mustard, especially if making an English-style mustard, and at Steenbergs we use horseradish to make a wasabi-style powder to make wasabi sauce at home which is great with sashimi and sushi.


Horseradish is a perennial herb, Armoracia rusticana, with a large taproot system and with large, green, fleshy leaves that look similar to spinach leaves.  Horseradish leaves grow to about 60cm long (24 inches), and blossom with numerous small, white aromatic flowers, followed by wrinkled pods with mostly unviable seeds.  The main taproot is 30cm (12 inches) long with smaller roots that branch off from the main root.  The inside flesh is white and fibrous that releases an intense, tear-jerking aroma that gets right into your nose.  These vigorous fumes are only created when the horseradish is cut as this enables two chemicals - sinigrin and myrosin - to become mixed together and create a volatile oil similar to that found in black mustard seeds.  To harvest horseradish, it is simply lifted, cleaned and washed, then grated immediately if making horseradish sauces from fresh roots or flaked then dehydrated for horseradish granules.  Oh, by the way, "horse" means "big" and not the animal, so it is a "big radish" in that it has a large taproot and a hot taste.  For more on horseradish, see Wikipedia.


Horseradish tastes acrid, sharp and hot.  Horseradish is usually prepared and served cold, because its spicy heat is reduced in the cooking process.  It tends to be used in a similar way to mustard as a condiment for cold meats, such as beef or ham, or cold fish, such as smoked eel or smoked salmon.  To make horseradish sauce, try this recipe from the BBC, using half the suggested amount of fresh horseradish given in a recipe.
