Garlic is closely related to chives, leeks and onions and is a hardy perennial with long, flat solid, spear-shaped leaves. It’s the crushing of cloves that releases that classic garlic aroma – strong, sulphurous and lingering – coming from alkyl disulfide. Uncooked garlic is sharp and acrid with a hot sensation on the palate, but on cooking it adds sweetness to the flavour while the sharpness and heat are reduced.
