Poppy seeds have a high, flavourful oil content with a mild, nutty taste.

Organic blue poppy seeds come from the poppy plant, Papaver somniferum.  Poppy plants are both annuals and perennials that grow to about 1.2m (4ft) high.  The poppy plants have flowers that blossom in a myriad of colours from white through to pink.  After flowering, the seed capsule forms as a rounded, papery-looking woody capsule with a multi-pointed crown at the top, with small holes around the rim.  Inside the centre of the capsule, there are several chambers containing hundreds and hundreds of small seeds of no more than a millimetre in diameter.  The capsule are mechanically removed when the seed heads turn yellow-brown, the capsule are dried then seeds removed from the capsules to create the organic blue poppy seeds.  Organic blue poppy seeds have little aroma except when you open a new bag when you get a waft of nutty, oily aromas, while the taste is a mild and slight nuttiness.  For more about blue poppy, dig into Gernot Katzer's Spice Pages.

Poppy seeds are usually used in baking, either through breads or sprinkled over the edge of bread or the outside of savoury or sweet biscuits.  Blue poppy seeds are ground to a paste with honey or liquid sugar to create the fillings for strudels and other pastries, or try this delicious recipe at Smitten Kitten for a Poppy Seed Lemon Cake.  Poppy seeds are also tasty added into vinaigrette or sprinkled over courgettes and potatoes or through salads to add an extra crunchy and nutty dimension to the salad leaves.  For some culinary excitement, try Allrecipes or BBC Website.
