Steenbergs loose leaf Organic Honeybush Tea is sourced from South Africa and is sometimes simply called Bush Tea.  It is naturally free from caffeine and low in tannins.  In many ways, organic honeybush tea is similar to organic redbush tea (rooibos tea) with similar light flavours, although it has a delicate ginger-like taste.  It does not taste of honey, rather this name comes from the slightly honey-like aroma of its flowers.  For more on honeybush check out http://en.wikipedia.org/wiki/Cyclopia_(plant).

Honeybush comes from Cyclopia intermedia, an indigenous shrub from the Cape fynbos family.  Honeybush shrubs grow in the coastal regions of the Western and Eastern Cape Provinces.  Honeybush plants have trifoliate leaves and single-flowered inflorescenses with a honey-like aroma.  The flowers are brightly yellow coloured and when flowering have a gorgeous, vibrant look.  Honeybush plants have woody stems, with leaves that are thin and needle-like.  The leaves are picked during the flowering season to make the tea, and only come from wild harvesting, as no commercial plantations exist.  The picked honeybush leaves are fermented in a preheated baking oven to toast them, when the leaves change from green to a dark-brown colour.

Brewing tip: brew with 1 teaspoon of organic honeybush leaf tea per 2-cup pot (2.5g per 180ml water). Add boiling water, infuse for 4 minutes. Do not add milk, but some sugar (or honey) may be great.  In South Africa, honeybush is brewed stronger and some milk is added.
