These Jasmine Bai Mu Dan flowering tea balls are hand made and hand stitched in Sichuan Province in China.  Jasmine bai mu dan has characteristic green-white tea flavours with delicate jasmine scents coming through.

To make jasmine bai mu dan, firstly new season tea is selected that has a mottled and white appearance, signifying a really early flush of rare quality from the first 2-3 weeks of a season.  These tea leaves are picked from teas that grow between 750-1400m (2500ft - 4500ft) above sea level in Sichuan Province.  These white tea leaves are tied together, then flattened out by hand to a wheel-like shape, after which the tea is steamed.  The damp hot tea is then mixed with fresh jasmine flowers and the two are dried together, enabling the delicate jasmine aromas to infuse into the jasmine wheels.  Later they are packed and moved from Chongquing and out from China via Hong Kong.

Jasmine bai mu dan wheels (often called Jasmine Wheel) are a prized gift, being given on the birth of a son or on marriage or to guests or good friends, where the shape represents a well rounded life for the boy, or the two halves signify the coming together of two special people in marriage, while for friends in signifies respect and the wish to remain best of friends for the fullness of life.  But in the end, they brew a dashed good cup of tea. 

Tea brewing: Put 1 wheel of Jasmine White Tea into a teapot (ideally glass).  Bring freshly drawn water to the boil, then after a short 15 second pause, pour the hot water over the Jasmine White Tea which will be at 80C/180F.  Let it brew and the flavours to percolate for 3 - 5 minutes.  Watch the shape transform itself into a hedgehog shape.
