Steenbergs Ching Wo Tea is a classic version of this red China tea.  Ching Wo is marketed these days as the tea that sustained Chairman Mao and the Communists during their Long March, but it was a staple of China teas back in the 19th century.  To quote from an 1883 book on tea regarding red leaf congous "The Ching Wo is the finest of all the red-leaf varieties...The special feature of Ching Wo is it delicate flavour."  I like the fact that it is light and clean with a nice red colour when brewed and a mild nuttiness in flavour.  For me, it is the perfect all-day, everday China black tea, which is just how Chairman Mao and his colleagues thought it as well.


Tea brewing: Put 1tsp of Ching Wo tea per cup into the pot.  Bring a kettle of freshly drawn water to the boil, then pour this heated water over the tea leaves.  Put the lid on the pot and leave to brew for 5 minutes.  Drink without milk, or add some milk and sugar to taste.
