Steenbergs Pyramid Sea Salt from Pakistan is made from beautiful white little crystalline hats of sea salt - also known as Arabian Fleur de Sel. Steenbergs Pyramid Sea Salt has a fabulous tetrahedral shape and a crisp, salty flavour. It is another beautiful addition to your dinner table as a finishing salt or to be kept handy by the hob for everyday cooking.
Arabian flaky salt is a cross between Bali pyramid sea salt and Cyprus flaky salt, but has its own unique character. Pyramid salt is a white crystalline sea salt that comes in big Khufu-like pyramids down to smaller discrete pyramids. They are wafer thin and virginal white, crushing satisfyingly in your fingers or crunching nicely between you teeth, although some of the really big ones can be more resilient. As for flavour, it is clean mineral with a taste of fresh sea air, that is mouthwatering and enhances flavours in nearly all types of food. I like it as it has none of the clever earthy sweetness of some sea salts nor the metallic robustness of others, being simple and definite - it is just what you expect and want from sea salt.
In Pakistan, it is called fleur de sel but is nothing like your French or Portuguese damp fleurs de sel, but a joyous and warm salt reminiscent of the meeting of warm oceans to desert shores. This natural salt is hand made in shallow salt ponds on the sea shore, where the salt is quickly dried in the hot sun and the gentle sea breezes, creating big salt crystals that grow fast and furious in the strong sunny heat. But the salt has a crisp marine taste that makes one dream of hot beaches.
Use like classic sea salts, use it as in recipes on the BBC website or try it with a Pakistani Fish Curry or Poached Lahori Fish.
