Freeze dried lime leaves give a clean floral and citrus flavour and aroma. Lime Leaves should be stored in airtight containers as they do lose flavour when exposed to air. Lime leaves are an important ingredient in Thai cuisine as it's the tangy, citrus perfume found so often in soups, salads, stir-fries and curries. Also used in Indonesia and Malaysian fish and chicken dishes. Remove leaves before serving.
