Hi, This an amazing blog post regarding tea temperatures and brewing times. I'd always had a piece of paper near our kettle, for the different teas we drink.

We've now got a Tea Machine (http://www.fine-t.co.uk/t-machine/) and it's absolutely brilliant!!! I've you've never heard of it, it basically does everything for you! You just tell it what sort of tea you are using, and it makes the tea using water at the right temperature, and steeps it for the right time. It's amazing!

It's made brewing tea so much easier, and we've tried loads of new teas that we wouldn't have tried previously.

This a review from T3 magazine - http://www.t3.com/blogpost.html?blogId=9&id=5717

This is quintessential English advice, you can tell, when the teas are separated into the categories of what time of day one should drink them. There's no such custom here in the US. It's quaint to us...but be warned: you can't always trust how much caffeine (or theine) is in different kinds of teas. So if that's your time-of-day concern you'll have to dispense with it. That is, of course, unless you drink the same teas every day and know just how they'll affect you.
